Healthy Blueberry Oatmeal Bars

These healthy blueberry oatmeal bars are added sugar free and dairy free. They are a perfect filling nutrient dense breakfast. It makes enough to enjoy the entire week. If you prefer things sweeter or want to turn these into dessert bars, you can reduce the milk and add in 1/4 cup of maple syrup.

Equipment

  • 1 measuring cup
  • 1 large glass bowl
  • 1 spatula
  • 1 tablespoon
  • 1 9 x 13 casserole dish

Ingredients
  

  • 4 cups rolled oats
  • 2 cups apple sauce or mashed banana
  • 1/4 cup nut butter
  • 3/4 cup almond milk or preferred milk
  • 2 TB pure vanilla extract
  • 1 TB cinnamon
  • 1/2 tsp. sea salt
  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat oven to 350 F.
  • Use a cooking oil/butter to grease the casserole dish or line with parchment paper.
  • In a large bowl, stir all ingredients until fully mixed (add blueberries last). Smooth mixture into the pan.
  • Bake on the center rack 35 minutes or until desired consistency.
  • Let cool then slice into bars.
